Our Story
It all started when my wife Deslie decided to go raw and organic in 2011. She was obsessed with it at the time and loved going to farmers markets, collecting cookbooks and researching cooking articles online. She started making some magnificent dishes and adopted veganism shortly after.
After the birth of our beautiful daughter, Amelia, we decided we needed a little vacation and decided to visit Del Mar, California. I picked up some restaurant magazines and saw an ad for a smoothie shop nearby. I absolutely loved how beautiful their bowls and dishes were, often loaded with lots of decadent fruits. We decided that this was going to be the look and feel of our new restaurant.
After tasting many different items from dozens of shops similar to our own vision, Deslie began working on a menu after her job no longer held her interest.
And so Coconut Hut was created with our goal set on bringing some of the healthiest, yet delicious, vegan dishes to the east valley. We encourage everyone to enjoy the fruits of labor and adopt a healthy lifestyle! Those with a little less time on their hands can enjoy some of our extremely delicious dishes.
